FLANK STEAK AND WILD RICE 
flank steak
2 cups wild rice
1 sm. sweet yellow onion (diced)
4 carrots (diced)
1 green pepper (diced)
1 red pepper (diced)
1 sm. package mushrooms, sliced or diced (optional)

Start boiling water for rice while preparing veggies. Add 1/2 - 3/4 cup more water than directed by rice package. When water starts to boil, add diced carrots. Allow carrots to cook approx 3-5 minutes alone then add rice. Halfway through the rice cooking time add rest of veggies. When rice is fully cooked stir thoroughly and set aside.

Fillet cut flank steak completely the long way. Lay the steak out and overlap the two pieces slightly (this will be rolled). Salt and pepper both sides of steak and add Lawry's Salt (or if you're in the Midwest go for Pleasoning) to taste.

Lay steak out and spread a layer of rice over the top. Roll steak tightly with rice inside. Lay rolled steak in casserole dish and spread the remaining rice around the steak and little bit on top of it. Cover with tinfoil and cook at 375°F until meat is cooked completely (use meat thermometer to check middle).

Uncover, slice and serve. It's a complete meal all wrapped up!

Prep time: 30 minutes, cook time: 1-2 hours.
