“MOM'S OLD FASHIONED HARD FUDGE” IS IN:
NEXT RECIPE:  MOM'S PEA SALAD

MOM'S OLD FASHIONED HARD FUDGE 
2/3 cup cocoa
3 cups sugar
1/8 tsp. salt
1 1/2 cups milk
1/4 cup butter
1 tsp. vanilla

Combine first four ingredients. Bring to a bubbling boil while stirring occasionally. Continue to boil without stirring until when tested in cold water forms a soft ball. Remove from heat and add butter and vanilla. Let it cool without stirring until top becomes glossy. Beat to combine vanilla and butter. Spread into buttered 9 inch pan. Nuts may be added at final beating if desired.

How long should it cool before beating in the butter & vanilla? Recipe says until it looks glossy but mine looked glossy when I took it off the heat. Is there an estimated time to cool or temperature to cool to? Thank you.

You add the butter and vanilla while it's still hot, but don't stir it in. Let it cool until the butter starts to resolidify and it looks waxy not oily. Then beat it in.

Here's moms recipe from the 60s. Nice firm fudge. 3 cups white sugar, 5 tablespoons powdered cocoa, 3 tablespoons cornstarch. 1 cup milk. Stir in large pot. Boil 5 minutes. Take off heat. Stir in small jar peanut butter and small jar marshmallow or almost both jars.
