OATMEAL CAKE 
CAKE:

1 1/4 c. boiling water
1 c. quick cooking oatmeal
1/2 c. (1 stick) butter
1 c. sugar
1 c. brown sugar
2 eggs
1 1/3 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. nutmeg
1 tsp. cinnamon

TOPPING:

6 tbsp. melted butter
1/4 c. milk
1 c. coconut
1/2 c. sugar
1 tsp. vanilla
1 c. chopped nuts

This cake depends on the air incorporated during mixing for its volume so beat well. In the mixing bowl place the boiling water, oatmeal and butter; let sit for 20 minutes. Add the rest of the ingredients and beat well. Batter is fairly thick. Pour into a greased and floured 9 inch square pan and bake at 350 degrees for 45 minutes.

Mix all topping ingredients in a small bowl. (I have often decreased the milk with good results.) Spread topping on cake and place the cake under the broiler. Watch Carefully. Broil only until coconut browns lightly and evenly over the cake. The cake needs to be about 2 inches from the broiler for this to work well. Allow cake to cool in the pan and serve from the pan.
