SOME LIKE IT HOT CHILI | |
1 lb. ground chuck 3 (28 oz. ea.) cans tomatoes 2 or 3 (15 oz. ea.) cans hot chili beans 3 envelopes hot chili seasoning 1/4 cup minced onions 4 cloves garlic, chopped 1/4-1/2 cup chili powder 1/2 teaspoon white pepper 1 teaspoon salt Brown ground chuck with onions and garlic. Puree tomatoes in blender, small chunks are ok. Put ground chuck, tomatoes and beans in a 10 quart pot. Add remaining ingredients. Add water to 1 inch from top of pot. Bring to a boil. Reduce heat and simmer over low heat, covered, for 2-6 hours, stirring every 15 minutes. Serving suggestion: put 2 oz. pepper jack cheese and/or chopped onions in bowl. Editor's note: Some brands of chili seasoning/powder can be hotter than others. Before you add all three envelopes of seasoning and all of the chili powder, taste and adjust according to your preferences. Submitted by: Norm Rawson |
