CHOCOLATE MACAROONS 
1/4 c. oil
2 sqs. baking chocolate, melted
1 c. sugar
2 eggs
1 tsp. vanilla
1 c. flour
1 tsp. baking powder
1/4 tsp. salt

Combine first 3 ingredients. Add beaten eggs and vanilla. Add dry ingredients. Chill. Roll into small balls. Dip balls in confectioners' sugar. (Do not flatten). On a greased cookie sheet bake for 10 minutes at 350 degrees. Don't overbake as cookies harden. Makes 2 1/2 dozen.
