CHICKEN SALAD LOG 
1 (8 oz.) pkg. cream cheese, softened
1/4 c. mayonnaise
2 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. ground ginger
1/8 tsp. pepper
1/8 tsp. cayenne pepper
2 c. cooked chicken, diced
2 hard boiled eggs, chopped
1/4 c. sliced green onions
3 green bell pepper rings
1 tbsp. toasted sesame seed
3 tbsp. chopped green onion &/or green bell pepper
3 tbsp. chopped black olives
3 tbsp. chopped pimento

Mix together cream cheese, mayonnaise, lemon juice, salt, ginger, pepper and cayenne pepper. Stir in chicken, eggs and 1/4 cup green onions. Shape into log 8 x 2 inches. Wrap and refrigerate until firm (about 4 hours).

Cut bell pepper rings to make strips. Place strips diagonally across log. Dividing log into 4 sections. Sprinkle sesame seed on 1 section. Then pimentos on next section, then olives, then green onion (4 separate colors). Serve with crackers.
