FRESH FRUIT COBBLER 
3/4 to 1 c. sugar
1 tbsp. cornstarch
1 c. water
3 1/2 c. sliced fresh fruit (apples, peaches, berries, plus juice)
1/2 tbsp. butter
Pinch of cinnamon

PASTRY:

1 c. flour
1/3 tsp. salt
1/3 c. plus 1 tbsp. shortening
2-3 tbsp. cold water
1/2 tbsp. butter, melted
Pinch of cinnamon

Combine sugar, cornstarch, and water and bring to a boil. Boil for 1 minutes; add fruit and juice and cook for 1 minute. Pour into well buttered 1 1/2 quart baking dish. Sprinkle lightly with cinnamon and dot with butter.

Prepare pastry by combining flour and salt. Cut in shortening until mixture resembles coarse crumbs. Sprinkle in water and mix gently into a soft ball of dough. Roll out on floured surface to 1/8 inch thickness. Cut into 1/2 inch wide strips and arrange in lattice pattern over fruit. Brush with melted butter, sprinkle with cinnamon and bake at 400 degrees for 30 minutes or until cobbler is golden brown and bubbly. Serves 6-8.
