POTATO SALAD 
6-8 med. potatoes, scrubbed & boiled with peeling
Chopped onion to taste (I use purple onion for color)
1/2 c. sugar
2 tbsp. flour
2 eggs, beaten
1/2 c. vinegar
1/2 c. water
2 c. cream, approx.
Salt & pepper

Boil potatoes, cool and slice. Cut up onion (about 1/2 cup). Boil sugar, flour, eggs, water and vinegar until thick and cool. Mix potatoes, onion, above boiled mixture and cream; use enough cream to give it the right consistency. Refrigerate. Best if made day before.
