STUFFED ZUCCHINI 
3 med. zucchini
2 tbsp. butter
1 lb. loose sausage
1 sm. can mushrooms
2 tbsp. flour
1/4 tsp. oregano
1 c. shredded cheddar cheese
1/4 c. Parmesan cheese

Cook whole zucchini in boiling water about 10 minutes or until tender; drain. Cut in half lengthwise. Scoop out centers leaving a 1/4" shell. Remove seeds and chop center portion and set aside. Brown sausage in large skillet, drain fat. Add butter and mushrooms. Sprinkle flour over the top. Do the same with oregano. Stir until blended. Remove from heat. Stir in cheddar cheese and reserved zucchini. Heat mixture through. Preheat broiler. Fill zucchini shells. Sprinkle with Parmesan cheese. Broil 3 to 5 minutes or until hot and bubbly.
