FRUITCAKE 
6 eggs, whites and yolks separated into two bowls
1/2 cup butter, melted
1/2 cup sugar
2 cups flour
1/4 tsp. cloves
1/4 tsp. nutmeg
1 tsp. baking powder
1 tsp. baking soda
1 tsp. vanilla
1 cup rum (or 1/2 cup rum & 1/2 cup water; Non-rum option: use 4 tsp. rum extract & 1 cup water)
2 8 oz. packages chopped dates
1 8 oz. candied cherries, diced
1 8 oz. candied pineapple, diced
3/4 tsp. cinnamon
2 cups raisins
3-4 cups chopped walnuts, diced

(You can substitute other candied fruit.)

Chop dates, cherries, pineapple, & nuts. Mix together. Add raisins to mixture. Beat egg whites and set aside. Mix remaining ingredients in a large mixing bowl. Fold in fruit and nut mixture. Fold in egg whites. Butter and flour 6 small loaf pans or a 9 x 13 pan.

Bake at 300°F for 45-60 minutes. Test with toothpick.
