BANANA - CARROT NUT LOAF 
2 c. flour, sifted
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. ripe bananas, mashed
1 c. sugar
3/4 c. cooking oil
2 eggs
1 c. carrots, finely grated
1/2 c. pecans, chopped

Sift together flour, baking soda, salt and cinnamon; set aside. Combine bananas, sugar, oil and eggs in mixing bowl. Beat with electric mixer at medium speed for 2 minutes. Add pecans. Stir in dry ingredients until flour is just mixed in. Fold in carrots.

Spread mixture in greased 9 x 5 x 3 inch loaf pan. Bake 55 minutes at 350 degrees. Cool in pan 10 minutes. Remove from pan; cool on rack. Wrap in foil; let stand overnight before slicing. Makes 1 loaf.
