ZUCCHINI PARMIGIANA | |
Oil 1 sm. onion, chopped 1 clove garlic, crushed 1 green pepper, strips 3 c. canned tomatoes 1 tbsp. chopped fresh parsley 1 lb. ground beef 1 1/2 lb. zucchini 1 c. dry bread crumbs 1/2 c. Parmesan cheese 1/2 lb. Mozzarella, sliced 1/4 tsp. oregano Salt and pepper to taste Heat 2 tablespoons oil. Add onions, garlic, green pepper and beef. Cook until meat is browned and onion is tender. Add tomatoes, parsley, oregano, salt and pepper. Cook uncovered about 30 minutes or until slightly. Cut zucchini into 1/4 inch slices and fry in 1/2 inch of oil until browned on both sides. Season to taste with salt and pepper. Mix bread crumbs, Parmesan cheese, salt and pepper. Alternate layers of zucchini, bread crumbs and beef sauce in 1 1/2 quart baking dish. Begin and end with zucchini. Top with sauce and Mozzarella cheese. Bake at 375 degrees for 20 minutes or cheese melts. |
