PINEAPPLE BREAD PUDDING | |
1/4 c. softened butter 1 pkg. instant vanilla pudding mix 1 tsp. cinnamon 3 eggs 3 c. milk 2/3 c. coconut 1 (No. 2) can crushed pineapple 1/2 c. raisins 1 tsp. vanilla Mix the first ingredients until fluffy, then add 3 eggs, one at a time. Into another bowl mix milk, coconut, crushed pineapple, raisins and vanilla. Blend into other mixture well. Cut 8 slices day old bread into pieces and fold into mixture. Pour into ungreased 2 quart casserole. Place in a large pan with 1 inch of boiling water in pan. Bake at 325 degrees for 1 1/2 hours or until knife inserted in center comes out clean. |
