FRIED EGGPLANT 
1 eggplant
1 egg
1 tsp. baking powder
1/4 c. milk
Pinch of salt
Cracker crumbs

Peel eggplant and slice thin, soak in salt water for 2 or 3 hours.

Make batter with egg, baking powder, milk, and salt. Dip eggplant in batter and then in cracker crumbs. Fry in deep, hot fat.
