HECK'S CHILI | |
2 lg. stalks celery 2 green peppers 3 med. onions 3 sm. cloves garlic 1/2 sm. fresh jalapeno pepper, diced 6 lb. lean chuck, coarsely ground 1 (7 oz.) can diced green chilies 1 (6 oz.) can tomato paste 1 (15 oz.) can tomato sauce 2 (15 oz.) cans stewed tomatoes 3 oz. chili powder 2-3 bay leaves 2 tbsp. cumin 1 can beer Tabasco to taste Salt, pepper, and garlic salt to taste 2 cans kidney beans (if more beans desired, substitute 1 can beans for 1 lb. ground chuck) Dice and saute first 5 ingredients. Add meat and brown. Add remaining ingredients. Add water just to cover. Cook 3-4 hours on low heat, stirring often. Freezes well. |
