CRANBERRY APPLE MUFFINS 
1 1/2 c. all-purpose flour (7 1/2 oz.)
1/2 c. walnuts
2 tsp. baking powder
1/2 tsp. salt
1 1/2 c. cranberries (5 1/4 oz.)
1 c. sugar
2 eggs
1/2 c. unsalted butter
1/2 c. buttermilk
2 tsp. maple flavoring

Preheat oven to 375. Bake for 26-30 minutes.

Directions:

Combine dry ingredients. Set aside. Slice cranberries in processor and add to dry ingredients.

Process sugar and eggs; add butter and blend until smooth. Mix in milk and maple flavoring.

Blend in dry ingredients. Spoon 1/3 cup batter into each muffin cups. Bake until light brown and springy to touch! Yum!
