RED EYE GRAVY 
After ham is fried, pour grease from skillet. Place skillet back on burner and add 1 cup hot water; let it simmer 2 or 3 minutes. Serve over hot water cornbread and ham. Hot water cornbread, and red eyed gravy has been favorite Taylor breakfast for over 100 years. Came to Texas from Tennessee in covered wagon.
