BAKED STUFFED KIBBE 
3/4 c. bulgur
3/4 lb. finely ground beef or lamb
1 lg. onion, finely grated
1 tsp. ground allspice
Salt, freshly ground pepper
A bit of oil for glazing

FILLING:

1 med. onion, grated
5 oz. ground beef or lamb
1/2 tsp. ground cinnamon
1/2 c. walnuts, chopped
1/2 c. raisins, chopped

First begin with the Kibbe. Rinse and drain bulgur well. Blend the meat into a smooth paste in a food processor. Remove to a large bowl and work in bulgur, onion, allspice and seasoning. Chill.

For the filling: Fry the onion and meat together until the meat browns. Add the cinnamon, nuts and raisins. Spread half the kibbe over a baking sheet. Cover with the filling, and top with the remaining kibbe, smoothing the top with a knife. Score into diamond shapes, brush with a little oil. Bake in a hot oven (400 degrees) for 35-40 minutes until browned. Serve hot or cold as an appetizer with salad.
