TURKEY HAM CASSEROLE WITH
RAISINS AND PINEAPPLE
 
3 c. diced cooked turkey ham
1/2 c. chopped raisins
3/4 c. canned pineapple chunks
3 tbsp. minced onion
1 green pepper, cut into rings
1 c. pineapple juice (from the canned pineapple)
2 tbsp. dry mustard
3 tbsp. lite soy sauce

Put the turkey ham in casserole; arrange onion and green pepper rings over it. Arrange pineapple and raisins on top. In a saucepan, heat pineapple juice and vinegar. Mix sugar, cornstarch, mustard; add to hot liquid. Stir until it thickens. Add lite soy sauce and sugar; pour over casserole.

Bake 45 minutes at 350°F.

Serves 6.
