CHICKEN FRICASSEE | |
2 full chicken breasts 3 tbsp. oil 1 1/2 c. water 1 tbsp. cornstarch 1 can cream of chicken soup 4 potatoes, chopped and cooked 4 carrots, sliced and cooked 1 onion 1/2 tsp. salt 1/4 tsp. pepper 1/4 tsp. thyme 2 tbsp. chopped fresh parsley 1 stalk celery with leaves 1 tbsp. soy sauce 1/4 tsp. poultry seasoning 1 pkg. chicken bouillon Reserve the liquid from cooking the potatoes and carrots. Skin and debone the chicken. Cut into bite-size pieces. Heat oil in large saucepan. Brown the chicken. Mix together seasonings, spices and bouillon, add to chicken. Add 1 cup water and vegetables. Add soy sauce, chicken soup and mixture of 1/2 cup water and cornstarch. Simmer for 30 to 40 minutes. |
