ITALIAN LOVE CAKE 
2 lb. Ricotta cheese
4 eggs, beaten
3/4 c. sugar
1 pkg. marble cake mix
1 tsp. vanilla

Beat together Ricotta cheese, beaten eggs, vanilla, and sugar. Set aside. Mix cake mix according to directions. Pour cake mix into 9 x 13 x 2 inch glass baking dish. Spoon cheese mixture over cake batter carefully. (Will come to top.) Bake at 350 degrees for 1 hour or until toothpick comes out clean. Cool cake before putting on topping. Serves 12-15.

TOPPING:

1 sm. pkg. instant chocolate pudding mix
1 c. milk
1 (8 oz.) carton Cool Whip

Mix milk and pudding until thick. Add Cool Whip. Blend by hand. Spread over cake. Chill 4 hours (overnight is better).
