IRISH STEW (MODERN VERSION)
2 lbs. boneless lamb, cut into 1" cubes
2 1/2 c. hot water
2 med. potatoes, cut into 1/2" cubes
2 med. carrots, thinly sliced
1/4 c. all purpose flour
1 clove garlic, minced
1 bay leaf
1 tsp. dried thyme leaves
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. brown bouquet sauce
1 (10 oz.) pkg. frozen chopped broccoli

Mix all ingredients except broccoli in a shallow 3 quart casserole; cover. Microwave at High (100%) 10 minutes. Reduce powder to medium high (70%). Microwave until lamb is tender 30 to 35 minutes, stirring 2 or 3 times during cooking.

Add broccoli, cover, microwave at medium high (70%) until stew is thickened and broccoli is tender, 15 to 20 minutes, stirring after half the cooking time. Let stand 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
