OYSTER STEW 
2-4 tbsp. butter
1 tsp. grated fresh onion
1/2 c. sliced thin celery
1 to 1 1/2 pts. oysters with liquid
1 1/2-2 c. milk
1/2 tsp. salt
1/8 tsp. white pepper
2 tbsp. chopped parsley

Use double boiler. Do not let top pot sit in the water. Place top over boiling water, saute first 3 ingredients. Place pan over boiling water and add oysters, milk, salt and pepper. When the milk is hot and the oyster FLOAT add parsley. Enjoy! Do not over cook.
