HEALTHFUL GOLDEN MACAROONS 
1 c. grated raw carrots
1/2 c. honey
1/4 c. water or just enough to barely cover top of carrots
2 tbsp. oil
1 tsp. almond extract
2 c. unsweetened coconut
1/4 c. soy flour (may purchase from health food store)
1/4 c. whole wheat flour
1/2 tsp. salt
