POLISH SAUSAGE WITH RED CABBAGE 
1 sm. head red cabbage
1 sm. apple, pared and diced
Salt
1 tbsp. lemon juice
1 tbsp. butter
1 sm. onion, chopped
1/8 tsp. pepper
1 Polish sausage
1/2 c. water
1 tbsp. vinegar

Quarter cabbage then shred coarsely and discard tough center. Place in large kettle with apple, salt, lemon juice and 1/2 cup water.

Simmer covered about 15 minutes. In small skillet saute onion until golden. Add onion to cabbage with pepper, vinegar and sausage. Cook covered for 30 minutes.

Spoon onto heated platter with sausage on top and cut into pieces. 5 servings.
