5 lb. pork (shoulder, head, feet, tail) 2 lb. liver Put pork in pot; cover with water. Do not season. Bring to a boil and cook until meat falls off bones. Put liver in hot water and boil for about 20-25 minutes. Combine the two meats and grind along with 1 medium onion and season with sausage season (old plantation). Season according to package. You may add a little more salt and pepper. I put mine in a cloth and press it or hang it up and let drip. |
