CHINESE CHICKEN SALAD 
4 chicken breasts, cooked in water with fresh ginger root, shredded
Lettuce, torn in bite-size pieces
Toasted almonds
Mushrooms, to taste
Chinese rice sticks (follow pkg. directions for frying)
Frozen peas, thawed
Sunflower seeds
Any other vegetable

Combine the above ingredients. Prepare dressing.

DRESSING:

8 tbsp. sugar
1/2 tsp. black pepper
1 c. oil
2 tsp. salt, optional
8 tbsp. red wine vinegar
