CHICKEN AND BISCUITS 
1 (2-3 lb.) chicken
1 sm. pkg. frozen peas
2 stalks celery, diced
2 carrots, diced
1 sm. onion, chopped
Biscuit mix

Cook chicken and salt to taste; cool and separate from bone. Cut chicken into small pieces; place in 9"x13" baking dish. Add salt and pepper to taste. Cook celery, carrots and onion until tender. Cook peas until tender. Add to chicken and mix well. Thicken chicken broth with cornstarch, pour over mixture until covered. Make drop biscuits from mix and drop over top 1" or less apart. Bake at 450 degrees until biscuits are done. Optional: Add 3 to 4 chicken bouillon cubes to broth.
