MEXICAN BREAKFAST CASSEROLE 
1 lb. ground sausage
8 eggs
1/2 lb. mushrooms, sliced
1 med. onion, chopped
5 tbsp. sour cream
1/2 c. med. salsa
8 oz. Velveeta cheese
2 c. Cheddar cheese, shredded
2 c. Mozzarella cheese, shredded
Salt and pepper to taste

Saute sausage, onions, mushrooms with salt and pepper. Drain well. Combine eggs and sour cream in blender for 2 minutes. Pour egg mixture into greased 9x13 inch baking dish. Bake at 400 degrees until eggs are set in the center, 2-10 minutes.

Spoon salsa over eggs, then top with sausage mixture. Layer cheeses, Velveeta, Mozzarella, Cheddar. Bake uncovered for 40-45 minutes at 300 degrees. Let stand for 10 minutes.
