FRESH CORN PUDDING 
4 ears fresh corn (about)
2 c. milk
2 tbsp. cornstarch or flour
3 eggs, well beaten
1 tsp. sugar
1 tsp. salt
1/4 c. butter, melted

Grease 1 1/2 quart shallow baking dish. Scrape corn kernels and liquid from cobs. (There should be about 2 cups). Stir together corn, milk, cornstarch, eggs, sugar, salt, and butter until well mixed. Pour into prepared baking dish. Place in baking pan; fill pan with hot water to depth of 1 inch. Bake in 350 degree oven 1 hour or until knife inserted in center comes out clean. Makes 6 servings.
