FILLING:1 stick butter 3/4 c. sugar Pinch of salt 2 eggs 3/4 c. white cornmeal 1/4 tsp. baking powder 1 tsp. almond or vanilla extract 1/2 tsp. jam, not jelly Icing Cherries Cream butter, sugar, salt, add eggs, then cornmeal, baking powder and extract. Roll pie crust into circles to fit tart pans. Put jam on top of crust. Then add 1 teaspoon or so on top of jam filling. Bake in 400 or 425 degree oven. When done, you can put icing on and a cherry when cold. |
