CHICKEN OREGANO 
1/2 c. lemon juice
1 tbsp. salt
2 tbsp. oregano
3 broiler chickens, halved
1/2 c. butter
1/3 c. olive oil
Pepper to taste
3 (1 lb.) cans tomatoes

Combine lemon juice, salt and oregano in small bowl. Rub chicken halves on both sides with mixture. Place in baking dish, skin side down, and let stand 1 hour in refrigerator, covered. Dot with butter.

Bake at 400 degrees for 1/2 hour. Turn chicken, drizzle with olive oil and sprinkle with pepper. Cover each half with tomatoes. Return to oven and bake 1/2 hour, basting occasionally with pan juices.
