ALMOND CREAM PIE | |
1 baked pie shell 2/3 c. sugar 3 tbsp. cornstarch 1/2 tsp. salt 3 c. milk or cream 3 eggs 1 tbsp. butter 1/2 tsp. almond flavor 1/2 c. toasted and slivered almonds Mix sugar, cornstarch and salt in saucepan. Stir in gradually 3 cups milk. Cook over medium heat and stir constantly until mixture thickens and boils. Boil 1 minute. Remove from heat. Gradually stir half of hot mixture into 3 egg yolks that are slightly beaten. Blend into hot mixture, boil 1 minute more. Stir constantly. Blend in butter, almond flavoring and 1/2 cup toasted slivered blanched almonds to the cooled filling. Can use 3 egg whites for meringue or top with whipped cream. |
