MANICOTTI 
CREPES:

3 eggs
1 c. milk
1 c. flour
Pinch of salt
1 tbsp. melted butter

Mix and let stand 30 minutes; grease small skillet; heat on medium; put enough batter in to cover skillet bottom for a thin crepe. When firm on first sides, turn and cook second side briefly; this amount makes approximately 17 crepes in my pan.

FILLING:

1 lb. ricotta cheese
1 egg
Sm. amount of parsley
Salt and pepper
Garlic salt
Sm. amount of Mozzarella

Mix above ingredients; place cheese filling in crepes and roll up; this fills approximately 30 crepes.

In baking dish, put a small amount of your favorite spaghetti sauce; place crepes seam side down; put more sauce on top. Can sprinkle with Parmesan cheese, if desired. Bake at 350 degrees for 35 minutes. Serve with more sauce.
