GRANDMA NICK'S DATE NUT COOKIES 
3 c. quick oatmeal
2 c. flour
1 c. brown sugar
1 c. shortening
1 c. sour milk
1 tsp. baking soda
1 tsp. baking powder

FILLING:

1 lb. pitted dates
1/2 c. brown sugar
1 c. boiling water

Dough: Cream shortening, sugar and add rest of ingredients as listed. Place in covered container and chill overnight.

Filling: Mix all ingredients and cook over low heat until thick, stirring to prevent burning.

Remove dough from refrigerator, roll out and cut into 2 or 3 inch rounds. Place spoonful of filling on half of rounds, top with remaining rounds, sealing edges by pressing lightly with fork. Bake on ungreased cookie sheets 10 to 15 minutes at 375 degrees.
