RED BEANS WITH RICE 
1 1/2 qts. water
1 lb. red beans
1 onion (chopped)
1 green pepper, (chopped)
1 carrot (chopped)
1/2 lb. salt pork
Salt and pepper, garlic, crushed red pepper, oregano, thyme, hot sauce, worcestershire sauce
8 oz. tomato sauce
2 lbs. smoked sausage (cut into 1/2 inch pieces)
Rice

Soak beans overnight in water. Next day, dice and fry salt pork, onion. Drain beans, add fresh water and bring to a boil. Add pork and onions, green pepper, 2 cloves of garlic, 1 tablespoon salt, 1 teaspoon crushed red pepper, black pepper, 1/2 teaspoon oregano, 1/4 teaspoon thyme, 3 or 4 dashes of hot sauce, 1 tablespoon worcestershire sauce and tomato sauce. Boil slowly for 2 hours, add the smoked sausage. Boil 2 more hours. Serve over boiled rice.
