BROCCOLI PEA CASSEROLE | |
2 (10 oz.) pkg. frozen chopped broccoli 15 oz. can small English peas, drained 10 1/2 oz. can cream of chicken or mushroom (undiluted) 1 c. mayonnaise 1/4 tsp. pepper 1/2 tsp. salt 2 eggs 2 tbsp. chopped onion 1 c. grated sharp cheddar cheese 1/2 c. crushed crackers Cook broccoli according to directions; drain. Mix chicken soup, mayonnaise, pepper, salt, eggs, onion and cheese to make a sauce. Set aside. Place 1/2 of cooked broccoli in a greased 3 quart casserole dish. Cover with peas and 1/2 of sauce. Add rest of broccoli, top with remaining sauce. Bake at 350 degrees for 30 minutes. Last 5 minutes add crackers to brown. Serves 8. |
