ZUCCHINI BREAD 
2 c. sugar
3 c. flour
1-2 tsp. cinnamon (I use 3-4 tsp. because we like cinnamon)
1 1/4 tsp. salt
1 tsp. baking soda
1/4 tsp. baking powder
3 eggs
1 c. Crisco oil
2 c. grated zucchini, peeled and pitted
2 tsp. vanilla
1/2 c. raisins
1/2 c. nuts

Peel zucchini, then put in blender or food processor and grate until thick milky consistency. Mix all liquids together. Then stir in dry ingredients. Grease and flour two loaf pans. Pour batter into pans and bake at 350 degrees 70-75 minutes until inserted toothpick comes out clean.
