BEEF CANTONESE 
2 lb. boneless beef, cubed
1 onion, chopped
3 tbsp. shortening
1 1/2 c. water
1 (11 oz.) can mandarin oranges, drain and reserve syrup
1/3 c. soy sauce
1/2 tsp. ginger
2 tbsp. cornstarch
1/4 c. cold water
1 sm. green pepper, cut into strips
2 c. celery
1 can water chestnuts
1 pkg. frozen pea pods

Brown beef and onions in hot shortening until onion is tender. Add 1 1/2 cups water, syrup, soy sauce, and ginger. Simmer 1 1/2 hours.

Blend cornstarch and 1/4 cup water; stir into beef mixture. Stir until thickened. Add rest of vegetables except pea pods and cook 10 minutes. Add pea pods and cook until thawed. Just before serving, fold in oranges. Serve over rice.
