GLAZED FRUIT BARS | |
3 eggs, separated 1 c. dark brown sugar 3 tbsp. butter 1 c. flour 1 tsp. vanilla 1 lb. jar glace'd fruits 1 c. seedless raisins 1/2 c. dates or prunes 1 c. chopped walnuts or pecans 1 tsp. baking powder In a large bowl place the egg yolks and sugar. Beat for 2 minutes until light. Add butter, flour and vanilla. In another bowl, beat egg whites stiff, then fold into the yolk mixture. Fold in all the fruits and nuts. Lastly, add the baking powder. Grease a 9 x 13 x 2 inch baking dish with butter and pour in the batter. Bake 40 to 45 minutes in a 350 degree oven. Makes 3 dozen bars which improve with age. Freezes very well. |
