RAGIN CAJUN TATERS 
Very spicy and great with fish or steak!

2 lb. red potatoes
canola oil spray
garlic powder
blackened seasoning mix

Wash potatoes thoroughly. Cut into quarters. Line a 9x13-inch pan with foil. Put potatoes in a single layer. Spray liberally with canola oil. Add garlic powder according to your taste. Cover with blackened seasoning mix

Note: I usually will shake the pan to be sure all the potatoes are completely covered or you can mix them in a bowl and then put into the pan.

Bake at 350°F for 45 to 60 minutes.

Serves 2 to 4.
