STIR-FRY CHICKEN 
1/2 lb. chicken breast strips (1/8 inch thick 1 x 1 inch square)
2 tbsp. salad oil
2 tbsp. soy sauce
1 med. size onion slice (long strips)
1 c. cut broccoli, bite-size
1 c. cut celery, long strip
1/2 c. cut carrots, long strips
3 cloves garlic, minced
Dash of salt
Dash of pepper

Heat oil in heavy skillet (high heat). Add clove garlic and salt. Add chicken, saute meat for 3 minutes. Add onion and saute for 1 more minute. Remove onion and meat from stove onto plate.

Steam vegetables with 3/4 cup water. In the same skillet with lid on steam vegetables for 4 minutes.

For gravy just add dissolved cornstarch to steamed vegetables skillet. Put the vegetables aside, use the middle of skillet. If you need more water, just add. Add chicken, fried onion to skillet and mix well with soy sauce. Serve with fried or plain rice. Makes 4 to 6 servings.
