DROP DONUTS 
2 1/4 c. flour
2 1/2 tsp. baking powder
1/2 tsp. salt
2 tbsp. shortening, Crisco
2 tsp. orange rind; optional
1/2 c. sugar
2 eggs, well beaten
1/2 c. milk
1 tsp. lemon juice

Sift dry ingredients together. Cream shortening (and rind) with sugar. Add eggs and mix well. Add dry ingredients alternately with milk and lemon juice, beating well. Deep fry by dropping by rounded teaspoonfuls in fat heated to 370 degrees. Turn frequently.

When golden brown (about 2 minutes), remove with slotted spoon. Drain on paper towels. When cool, roll in powdered sugar. Makes about 3 dozen.
