SHINY-TOP COBBLER 
5 c. unsweetened fruit
1 1/2 tbsp. lemon juice
2 c. flour
3 c. sugar
2 tbsp. cornstarch
1 c. milk
1/3 c. butter
2 tsp. baking powder
1 tsp. salt
1 1/2 c. boiling water

Spread fruit in well greased 2 1/2 quart shallow baking dish. Sprinkle with lemon juice; set aside. In medium bowl, stir flour, 1 1/2 cup sugar, milk, butter, baking powder, and 1/2 teaspoon salt until well blended. Spoon this over the fruit. Spread to the edges, set aside. In small bowl, mix remaining 1 1/2 cups sugar, cornstarch, and 1/2 teaspoon salt. Sprinkle this over the batter. Pour boiling water over all of this. Bake at 350 degrees for 1 hour or until golden brown and glazed.
