MOIST 'N CREAMY COCONUT CAKE | |
1 pkg. (2 layer size) yellow cake mix or pudding included cake mix 1 1/2 c. sweet milk 1/2 c. sugar 2 c. Angle Flake Coconut 1 (8 oz.) container Cool Whip Prepare cake mix as directed on package baking in 13"x9" pan about 35 or 40 minutes at 350 degrees. Cool 15 minutes. Then poke holes down through cake with utility fork. Meanwhile, combine milk, sugar and 1/2 cup coconut in saucepan. Bring to boil, reduce heat and simmer for one minute. Carefully spoon over warm cake, allowing liquid to soak through holes. Cool completely and fold 1/2 cup coconut in Cool Whip and spread over cake. Sprinkle remaining coconut over top. Chill overnight. |
