MUNCHY PEANUT BRITTLE 
1 c. sugar
1/2 c. light corn syrup
1 c. roasted peanuts
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda

In 1 1/2 or 2 quart casserole, mix together sugar and syrup. Microwave on high for 4 minutes. Stir in peanuts. Microwave on high 4 minutes until light brown. Add butter and vanilla. Microwave on high 1-2 minutes until peanuts lightly brown and syrup very hot. Add baking soda and stir gently until light and foamy. Pour mixture onto lightly greased cookie sheet. Let cool 1 hour, then break into pieces and store in airtight container.

Since microwave ovens vary in power, you may need to adjust your cooking time.
