MEATBALLS AND LIMA BEANS 
1 (10 oz.) pkg. frozen lima beans
2 slices bread
1/4 c. milk or buttermilk
1 egg
1 1/2 tsp. salt
1/4 tsp. pepper
1 clove garlic, minced
1 lb. ground beef
1/2 cube butter
1/2 c. water
1 c. sour cream

Cook lima beans according to package instructions. Meanwhile, soak bread in milk for a few minutes, squeeze out excess milk.

Beat egg slightly with 1 teaspoon of the salt and the pepper. Add garlic, then combine with ground beef and soaked bread. Roll mixture into balls the size of a walnut.

Brown meatballs with 1 tablespoon of the butter. Transfer to a medium-sized casserole. Pour water into pan. Stir to remove drippings and pour over meatballs. Mix drained lima beans with other butter and 1/2 teaspoon salt. Pour over meatballs, mix gently and then bake at 325 degrees for 20 minutes. Stir in sour cream and bake for 10 more minutes. Serves 4.
