EM'S SHOOFLY PIE 
1 1/2 c. sifted flour
1/8 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 tsp. baking soda
3/4 c. boiling water
1/2 c. sugar (brown and white mixed)
1/4 tsp. ginger
1/4 c. butter
1/2 c. dark molasses
1 unbaked 8-inch pastry shell

Mix together flour, sugar, salt and spices. Cut in butter until mixture resembles coarse meal. Mix together baking soda and molasses and immediately stir in boiling water. (It will bubble up.)

Pour 1/2 liquid into pastry-lined pie pan. Sprinkle 1/2 of crumbs over liquid. Pour remaining liquid on top. Cover top of pie with remaining crumbs. Bake at 350 degrees for 30 minutes.
