FISH CHOWDER 
1/4 lb. salt pork
3 med. onions
5 med. potatoes, cubed
4 tsp. salt
1/4 tsp. paprika
3 c. boiling water
1 1/2 lbs. fish fillets cut into 2 1/2" squares
5 c. milk

Fry salt pork in small pieces until crisp; set aside. Slice onions 1/4". Simmer until tender. Sprinkle with salt and pepper.

In soup pan put onions and potatoes. Cover this with the boiling water. Lay carefully over potatoes the 2 1/2" squares of fish. Cover pan and simmer 25 minutes. Pour in milk, heat slowly. Add salt pork bits and lumps of butter. Cook until butter melts.
