TACO LASAGNA 
1 lb. hamburger
1 (16 oz.) can whole peeled tomatoes, chopped
1 pkg. taco seasoning
1 (12 oz.) carton cottage cheese
1 1/2 c. shredded cheese, Cheddar or Monterey Jack
2 eggs
12 (6 inch) corn tortillas
Chopped tomatoes, lettuce and black olives for garnish
Sour cream for garnish

In skillet brown hamburger with onions and peppers if desired. Drain if needed. Add canned tomatoes and taco seasoning. Simmer 2 minutes. In bowl mix cottage cheese, 1 cup of the shredded cheese and the eggs. (Reserve 1/2 cup shredded cheese for garnish). In greased 9 x 13 inch pan layer 6 tortillas, 1/2 the meat, 1/2 the cheese mixture.
